Wash the baby spinach thoroughly and spin or pat dry. If using a large jalapeño and you prefer milder heat, halve it lengthwise and remove seeds and membranes; measure half for the recipe.

Peel and slice the banana. If using fresh mango and pineapple, peel/core and cut into chunks.

Measure out pumpkin seeds and set aside a small pinch for garnish.

Blend the Smoothie

Layer and Blend

Add the coconut water and cold water to the blender first (this helps blades move easily). Add the banana, pineapple, and mango. Then add the baby spinach, jalapeño, grated ginger, pumpkin seeds, and Greek yogurt (if using).

Secure the lid and blend on high for 45–60 seconds or until completely smooth. Stop and scrape down the sides if needed, then blend another 10–15 seconds.

Taste and adjust: add honey or agave to taste if you want more sweetness, or add a little more lime juice for brightness. If the smoothie is too thick, add up to an additional 1/4 cup cold water or more coconut water and blend briefly to reach desired consistency.

Finish & Serve

Pour the smoothie into a 16–20 oz glass. Garnish with a thin jalapeño slice and a sprinkle of extra pumpkin seeds for texture.

Serve immediately chilled. Stir briefly before drinking if the pumpkin seeds settle.

Storage: refrigerate in an airtight container for up to 24 hours; shake or re-blend briefly before consuming. For best nutrient retention, consume immediately.
