Tangerine-Pineapple Base

Method

Tangerine-Pineapple Base

1

Juice the fruit (if using whole fruit)

If using whole tangerines and fresh pineapple, juice or blend and strain enough to yield 1 cup tangerine juice and 3/4 cup pineapple juice. Otherwise, measure prepared juices.

2

Combine the tangerine juice, pineapple juice, and agave/simple syrup in a pitcher. Stir until the syrup is fully incorporated.

Aloe & Basil Element

3

Lightly bruise the 8 basil leaves to release oils: stack the leaves, roll them between your palms or clap them once. Do not pulverize — you want aromatic oil without bitterness.

4

Add the bruised basil leaves and 1/4 cup aloe vera juice to the juice mixture. Stir and let steep for 4–6 minutes at room temperature to infuse. If you prefer a stronger basil note, steep up to 10 minutes but taste for bitterness.

5

After steeping, use a fine mesh strainer to remove and discard the basil leaves (or leave a few torn bits in for texture if desired).

Sparkle & Finish

6

Fill two serving glasses halfway with ice (about 1/2 cup ice per glass).

7

Divide the infused tangerine-pineapple-aloe mixture between the two glasses, filling each about two-thirds full.

8

Top each glass with 1/4 cup sparkling water (adjust to taste) to add effervescence and gently stir once to combine.

9

Taste and add a pinch of sea salt across both drinks if desired to brighten flavors.

10

Garnish each glass with a tangerine wheel or pineapple wedge and a basil leaf. Serve immediately.
