Confirm which beer is currently on the rotating tap (Live Oak Hefeweizen, Firemans 4, Big Bark, 512 IPA, McConauhaze, etc.). Verify keg identity by checking keg label, tap handle, and keg log to ensure freshness and correct beer.

Check rotation and keg selection

Confirm keg is properly tapped with the correct keg coupler and that the CO2/nitrogen regulator is set to the recommended serving pressure for that beer (typically 10–14 psi for most ales; adjust as needed for style and line length). Check that lines and faucet are clean and free of visible beer residue; wipe the faucet with a clean towel or disinfectant if necessary.

Ensure system readiness

Use a clean pint glass, preferably chilled but not frosted. Rinse the glass briefly with cold water to remove dust and reduce foaming. Hold the glass at a 45-degree angle under the faucet about 1–2 inches from the spout.

Prepare the glass

Pull the faucet handle fully open in one smooth motion and allow beer to flow down the side of the glass to minimize foam. For a standard pour, aim to fill the glass to about 3/4 while angled to control head formation.

Open the tap and start the pour

When the glass is about 3/4 full, gently straighten it to an upright position and continue pouring to create a 1/2"–1" head (12–25 mm) depending on style: hefeweizen and some ales benefit from a taller fluffy head, while some IPAs prefer a slightly smaller head. Close the faucet smoothly to stop flow and avoid drips.

Finish the pour

Wipe any drips from the glass with a clean towel. Place a coaster under the pint if available. If a customer requested a garnish (common with some hefeweizens), serve a lemon or orange wedge on the side; do not drop it into the beer unless asked. Present the pint to the customer and confirm it is the selection they ordered.

Clean and present

Taste or visually inspect pours periodically to ensure consistent head retention, aroma, and appearance. If excessive foam, off-flavors, or unusual appearance occur, check keg temperature, pressure, and cleanliness of lines and faucets, and rotate or replace lines/kegs as needed.

Monitor pour quality

Offer a lemon or orange wedge on the side for wheat beers (like a hefeweizen) if the customer desires. For IPAs and other hop-forward beers, do not add fruit unless requested, as it can alter the flavor profile.

If customer prefers a sample, pour a 4–6 oz tasting pour using the same technique into a smaller clean glass and present it before committing to a full pint.
