Prepare bacon and sides

Cook bacon

Preheat oven to 200°C (400°F). Arrange 6 bacon strips on a rimmed baking sheet lined with foil or a wire rack. Bake for 12–18 minutes until crisp to your liking. Remove and transfer to a paper-towel–lined plate to drain. Keep warm in the oven at low heat if needed.

Cook hash browns (if selected)

In a nonstick skillet over medium-high heat, add 1 tsp olive oil. When hot, add 1 cup shredded potatoes in an even layer. Press lightly and cook undisturbed 4–5 minutes until golden; flip and cook 3–4 more minutes until crisp. Season with a pinch of salt and keep warm.

Prepare other sides (if selected)

For fruit salad: assemble 3/4 cup fresh mixed fruit and chill. For toast: toast an extra slice and spread butter. For mixed greens: toss 1/2 cup greens with a light vinaigrette and set aside.

Beat eggs

Crack 6 large eggs into a medium bowl. Add 3 tablespoons whole milk, 1 teaspoon salt, and 1/2 teaspoon black pepper. Whisk vigorously until the mixture is uniform and slightly frothy (about 20–30 seconds).

Cook eggs

Heat a 10–12 inch nonstick skillet over medium-low heat. Add 2 tablespoons unsalted butter and let it melt and foam but not brown. Pour the egg mixture into the pan. Let it sit undisturbed 10–15 seconds until edges begin to set. Using a silicone spatula, gently push eggs from the edges toward the center, forming large soft curds. Continue folding and sweeping every 10–15 seconds. When eggs are mostly set but still slightly glossy and creamy (about 2–3 minutes total), remove from heat to stop cooking.

Add cheese and finish eggs

Immediately sprinkle 1 cup shredded queso over the eggs in the pan. Gently fold the cheese into the warm eggs so it melts and creates a creamy, cheesy texture. Taste and adjust seasoning if necessary.

Toast English muffin

While eggs finish, split and toast 1 English muffin until golden. Butter lightly if desired.

Prepare avocado and tomato

Halve and pit the ripe avocado. Slice one half into 6–8 slices (reserve other half for another use) or mash with a fork and a pinch of salt, depending on preference. Slice the medium tomato into 3–4 thin rounds. Lightly sprinkle tomato with a pinch of salt.

Assemble Eggs Francisco

Place toasted English muffin on the plate. Spoon the cheesy scrambled eggs onto the muffin. Arrange 3 cooked bacon strips over the eggs and add the avocado slices and tomato slices alongside or on top. Garnish with 1 tablespoon chopped chives or parsley and a dash of hot sauce if desired.

Serve with sides

Serve the plate with the two chosen breakfast sides (for example, hash browns and fruit salad). Ensure everything is warm and serve immediately.
