Tortillas & Salsa

Warm the tortillas: heat a dry skillet over medium-high heat. Warm each tortilla 20–30 seconds per side until pliable and lightly charred in spots. Keep wrapped in a clean kitchen towel to stay warm. Spoon salsa into a small serving bowl or place on each tortilla just before assembling.

Cook bacon

Place a skillet over medium heat and add bacon strips. Cook 3–5 minutes per side until crisped to your liking. Transfer to a paper-towel-lined plate and drain. When cool, break or slice into bite-size pieces.

Scramble eggs

Crack 2 eggs into a bowl, add salt and pepper, and whisk until blended. In a nonstick skillet over medium-low, add 1 tsp butter or oil and let it melt and coat the pan. Pour eggs in and cook gently, stirring occasionally, until soft-curd scrambled, about 2–3 minutes. Remove from heat just before fully set (carryover will finish cooking).

Assemble filling

Divide the scrambled eggs evenly between the two warmed tortillas. Top with the broken bacon pieces and scatter the shredded cheddar-jack cheese so it melts slightly from the warm eggs. Add 1–1.5 tbs salsa per taco (or serve salsa on the side).

Optional Proteins / Substitutions (instructions per item)

If using breakfast sausage patties or links, heat in a skillet over medium heat 3–6 minutes per side until cooked through, or reheat pre-cooked sausage until hot. Slice or crumble and add to tacos.

Veggie or pork chorizo

Crumble raw pork or veggie chorizo into a skillet over medium heat. Cook, breaking up with a spatula, until no pink remains (pork) and browned (veggie), about 6–8 minutes. Drain any excess fat and spoon onto tortillas.

Tofu scramble

Crumble firm tofu and sauté in 1 tsp oil over medium heat with a pinch of salt, turmeric (optional 1/4 tsp for color), and pepper. Cook 4–6 minutes until heated and slightly browned. Use as an egg substitute in tacos.

Seasoned home fries

If using home fries, reheat in a skillet with 1 tsp oil over medium-high heat until crisp and hot, about 4–6 minutes. Season with salt, pepper and paprika or cumin to taste. Spoon 1/2 cup onto each tortilla as a hearty base.

Final assembly & Serving

Arrange warmed tortillas on a plate. Place chosen fillings (eggs, bacon, cheese in this example) in the center of each tortilla. Top with salsa, a squeeze of lime if using, and chopped cilantro. Fold and serve immediately while warm.

For two tortillas choose any three toppings from the options provided and follow the corresponding cooking steps above. Adjust salt, pepper, and salsa heat to taste. Estimated single-serving variations: if you pick heavier items (home fries, chorizo) distribute portions so both tacos are evenly filled.
