Make batter

In a medium bowl whisk together flour, sugar, baking powder and salt. In a separate small bowl whisk milk, half an egg (beat one egg and use roughly half — reserve the rest for eggs), and melted butter until combined. Pour wet ingredients into dry and stir gently until just combined; lumps are fine. If using blueberries or chocolate chips fold them in now.

Cook pancakes

Heat a nonstick skillet or griddle over medium heat and brush with 1 tsp oil or a little butter. For half-size pancakes use about 3 tablespoons (roughly 1.5–2 in diameter) of batter per cake. Pour batter into the hot pan and cook until small bubbles form on the surface and edges look set, 1–2 minutes. Flip and cook another 45–90 seconds until golden and cooked through. Repeat to make two half-size pancakes (you may cook both at once if pan fits). Keep warm on a plate tented with foil.

Prepare eggs any style

Choose style: scrambled, fried (sunny-side or over-easy), or poached. - For scrambled: whisk the remaining half of the beaten egg plus one full egg (so total 1.5 eggs used) with a pinch of salt and pepper. Heat 1 tsp butter in a nonstick skillet over medium-low, pour in eggs, let set briefly, then stir gently until soft curds form, remove while slightly moist, 1–2 minutes. - For fried (sunny-side): heat 1 tsp butter in skillet over medium-low, crack two eggs into pan, season with salt and pepper. Cook slowly until whites are set and yolks still runny, about 2–3 minutes. For over-easy, flip and cook 10–20 seconds more. - For poached: bring 3 inches of water with 1 tbsp vinegar to a gentle simmer, swirl water, crack each egg into a small cup and slip into water, cook 3 minutes for runny yolk, remove with slotted spoon and drain on paper towel. Season with salt and pepper.

Cook bacon

To cook bacon strips: heat a skillet over medium, add bacon and cook, turning occasionally, until crisp or to desired doneness, 6–10 minutes depending on thickness. Drain on paper towels. (Alternatively bake at 400°F/200°C on a wire rack over a sheet pan for 12–18 minutes.)

Cook sausage

For sausage links or patties: heat skillet over medium, add sausage and cook, turning occasionally, until browned and cooked through to 160°F/71°C (about 8–12 minutes for links, 6–8 minutes for patties). Drain on paper towel.

Prepare seasonal fruit

If choosing fruit, wash and slice or portion about 1/2 cup of mixed seasonal fruit (berries, melon cubes, or sliced apple/pear). Serve chilled or at room temperature.

Assembly & serving

On a plate arrange the two half-size pancakes stacked or side-by-side. Top pancakes with 1/2 tbsp butter and dust lightly with powdered sugar if desired. Place the two eggs next to the pancakes and add the chosen side (bacon, sausage, or fruit). Serve with 2 tbsp maple syrup on the side. Offer salt and pepper at table.
