Prepare the Broth

In a large pot, bring the chicken broth to a boil. Once boiling, reduce the heat and add soy sauce, stirring to combine.

Cook the Noodles

Add the saimin noodles to the broth and cook according to the package instructions, usually about 3-5 minutes, until tender.

Prepare the Toppings

While the noodles are cooking, hard boil the eggs by placing them in a pot of cold water, bringing it to a boil, and cooking for 8-10 minutes. Remove and place in cold water. Slice the char siu, and prepare the fish cake and green onions by slicing them thinly.

Assemble the Saimin

Once the noodles are cooked, divide them into bowls. Ladle the hot broth over the noodles. Top each bowl with sliced char siu, fish cake, bean sprouts, and sliced green onions.

Finish with Eggs and Nori

Peel the hard-boiled eggs and slice them in half. Place two halves in each bowl of saimin. Drizzle sesame oil over the top and garnish with nori sheets.
