Method
Sushi Rice & Seasoning
Rinse rice
Place short-grain sushi rice in a fine-mesh sieve or bowl. Rinse under cold running water, gently swishing, until the water runs nearly clear (about 3–4 rinses). Drain for 10 minutes.
Cook rice
Combine the rinsed rice and 1.1 cups water in a small pot with a tight-fitting lid. Bring to a gentle boil over medium heat, then reduce heat to low and simmer, covered, for 12–14 minutes until water is absorbed and rice is tender. Remove from heat and let rest, covered, 10 minutes.
Season rice
While rice rests, warm rice vinegar, sugar, and salt in a small pan or microwave until sugar dissolves. Transfer rice to a shallow bowl or hangiri if available. Gently fold the vinegar mixture into the rice with a wooden spoon or rice paddle using cutting and fanning motions to cool the rice to near room temperature (fan or blow to give a slight sheen). Do not mash—keep the grains slightly separate.
Fillings & Assembly
Prepare fillings
Slice the sashimi-grade salmon and tuna into thin slices about 1/8–1/4 inch thick and 1–1.5 inches long. Slice avocado into thin slices. Julienne the cucumber into thin matchsticks. Toast the nori sheet briefly over a low flame or in a dry pan until crisp, then cut into quarters (you will use pieces to line or wrap sushi).
Form rice balls (4 pcs)
Wet your hands lightly with a mixture of water and a pinch of rice vinegar to prevent sticking. Divide the seasoned rice into four equal portions (about 1/4 cup each). Gently compress each portion into an oval or small rectangle shape appropriate for nigiri or small pressed sushi. Do not over-compress—aim for a cohesive but tender rice base.
Assemble chef's-choice variations
Variation A - Salmon nigiri: place a thin smear (~1/8 tsp) of wasabi on one side of a salmon slice, then drape it over one rice portion. Garnish with a few toasted sesame seeds and a pinch of sliced scallion. Variation B - Tuna nigiri: place a thin smear of wasabi on a tuna slice, drape over a rice portion. Serve simply with a dot of soy sauce or a light brush of soy. Variation C - Avocado & cucumber maki bite: place a small strip of nori on a rice portion (shiny side down), top with avocado slices and julienned cucumber, press gently so fillings adhere. Optionally drape a thin tuna or salmon slice over top for a hybrid bite. Variation D - Salmon sashimi-on-rice with garnish: top the final rice portion with salmon and a small swipe of wasabi, garnish with pickled ginger on the side and a few sesame seeds.
Final touches
Arrange the four prepared pieces on a small serving plate. Add a small mound of pickled ginger and a dab of wasabi on the side. Pour soy sauce into a small dipping dish. Serve immediately at room temperature (rice should not be hot).
Seasonings & Garnishes
When serving, provide soy sauce for dipping and place pickled ginger between bites to cleanse the palate. Use the remaining scallion and sesame seeds to lightly garnish the sushi pieces. Adjust wasabi amount to taste by allowing diners to add more if desired.
