Sushi Rice & Seasoning
Rinse and cook rice
Rinse 2 cups sushi rice under cold water until the rinse water runs nearly clear to remove excess starch. Drain and place the rice in a rice cooker or heavy saucepan with 2.2 cups water. Cook according to your rice cooker instructions or bring to a boil, then reduce to low, cover and simmer 18 minutes. Turn off heat and let rest, covered, for 10 minutes.
Season rice
While rice cooks, combine 3 tbs rice vinegar, 1 tbs sugar, and 1 tsp kosher salt in a small saucepan and warm gently just until sugar and salt dissolve; do not boil. Transfer cooked rice to a large shallow wooden or nonreactive bowl. While rice is hot, drizzle the seasoned vinegar over it and fold gently with a wooden spatula to combine and fan the rice to cool to near room temperature. Cover with a damp towel to keep moist until assembly.
Tempura Soft-Shell Crab
Prepare crabs
Pat the cleaned soft-shell crabs dry with paper towels. Season lightly with 1/2 tsp salt. If necessary, splay the legs outward to create the classic 'spidery' appearance; you can use a quick shallow slit at the base of the legs to help them stay spread while frying.
Make tempura batter
In a bowl, combine 1 cup all-purpose flour and 1/4 cup cornstarch with 1/2 tsp baking powder. In a separate chilled bowl, whisk 1 large chilled egg lightly, then add 1 cup ice-cold sparkling water. Pour the wet into the dry and stir very briefly — a few lumps are fine; do not overmix to keep batter light and airy.
Dredge and fry
Heat vegetable oil in a deep pot or fryer to 350°F (175°C). Lightly dust each crab in a little extra flour (this helps batter adhere), then dip into the tempura batter, coating evenly. Carefully lower the crabs into hot oil, legs spread, and fry 2–3 minutes per side until golden and crisp. Work in batches to avoid crowding. Remove to a wire rack or paper towel-lined tray to drain and keep warm in a low oven (around 200°F / 95°C) while you assemble rolls.
Fillings & Wrap
Prepare nori and rice
Place a bamboo sushi rolling mat on your work surface and set down a sheet of plastic wrap over the mat (optional for cleanliness). Place 1 full nori sheet shiny side down on the mat. With wet hands, take about 1 cup of prepared sushi rice and spread it in an even, thin layer over the nori, leaving a 1-inch (2.5 cm) strip at the far edge without rice to seal. If you prefer inside-out rolls, place rice on plastic wrap, sprinkle sesame, and flip the nori on top — this recipe describes a standard nori-out spider roll.
Assemble roll
Spread about 1 1/2 tbs mayonnaise mixed with 1 tsp Sriracha (adjust heat to taste) in a line across the rice near the near edge. Arrange cucumber julienne (about 2 tbs), sliced avocado (half the avocado per roll, overlapping), and 2 soft-shell crabs (one per roll if making 2 rolls total) with legs oriented so they will protrude from the roll when sliced. Sprinkle 1 tbs sliced green onion over the filling. Using the bamboo mat, roll firmly but gently from the near edge, tucking the filling as you go, and pull the mat to form a tight cylinder. Seal the far edge with a little water.
Portion and slice
Using a very sharp knife dipped in water between cuts, slice each roll into 6–8 equal pieces. As you slice, the crab legs should fan out from the roll creating the signature spider appearance. Wipe the blade as needed for clean cuts.
Garnish & Serve
Arrange roll pieces on a platter. Drizzle or dot additional spicy mayo (extra mayo + Sriracha) across the top if desired and sprinkle with sesame seeds. Serve with soy sauce, pickled ginger, and wasabi on the side. Garnish with microgreens or shiso leaves if using.
