Method
Sushi Rice
Rinse and cook rice
Place 2 cups short-grain sushi rice in a fine-mesh sieve and rinse under cold running water, stirring with your hand, until the water runs clear (about 3–5 minutes). Drain 10–15 minutes. Combine rinsed rice and 2.25 cups water in a rice cooker or heavy saucepan. If using a saucepan, bring to a boil over medium-high, then reduce to low, cover tightly and simmer 15 minutes. Remove from heat and let rest, covered, 10 minutes.
Season rice
While the rice cooks, warm 3 tbs rice vinegar, 1.5 tbs sugar and 1 tsp salt in a small saucepan over low heat just until sugar dissolves (do not boil). Transfer cooked rice to a large shallow wooden or plastic bowl (avoid metal). Gently fold the vinegar mixture into rice with a rice paddle or wooden spoon using cutting and fanning motions to cool rice to body temperature. Cover with a damp towel to keep it from drying while you prepare fillings.
Salmon Preparation
Slice and marinate salmon
Using a very sharp knife, cut the 8 oz salmon fillet into two portions: one portion (~4 oz) to slice thinly for topping and the other (~4 oz) diced for filling. For the diced filling, toss with 1 tbs low-sodium soy sauce, 1 tsp sesame oil and 1 tbs lime juice. For the thin slices, lightly brush with a small amount of soy (about 1 tsp) and set on a plate chilled until assembly.
Optional quick sear (beach-style smoky note)
If you prefer a slightly smoky touch, heat a nonstick skillet over high heat until very hot, briefly sear the thin salmon slices (10–12 seconds per side) just to give a faint char but keep raw interior. Cool on a rack. This step is optional — keep raw if you prefer sashimi-style.
Filling & Sauce
Make spicy mayo
Mix 2 tbs mayonnaise with 1 tsp Sriracha and 1 tsp lime juice in a small bowl until smooth. Taste and adjust heat or acidity. Reserve half for drizzling and half to mix with crab if desired.
Prepare crab and vegetables
If using imitation crab, shred or chop into thin strips. Peel, pit and slice the avocado lengthwise into thin slices and squeeze a little lime juice to prevent browning. Julienne 1/2 cucumber and thinly slice 2 scallions. Toss shredded crab with a tablespoon of the spicy mayo (optional) to bind.
Assembly
Place a bamboo rolling mat on your work surface and cover it with plastic wrap to keep it clean and prevent rice from sticking. Place one nori sheet shiny-side down on the plastic-covered mat.
Wet your hands with a mixture of water and a touch of rice vinegar (keeps rice from sticking). Spread about 1/2 cup of seasoned sushi rice evenly over the nori, leaving a 1-inch (2.5 cm) strip at the far edge free of rice. Press rice gently to an even thickness (about 1/4 inch).
Near the edge closest to you, arrange a thin line of the diced marinated salmon (about 2–3 tbs), a line of shredded crab (about 2 tbs), a few cucumber julienne, a couple slices of avocado, and a sprinkle of sliced scallions and microgreens. Do not overfill — keep the line narrow so the roll closes cleanly.
Begin rolling: lift the mat edge closest to you and roll forward, pressing gently but firmly to form a tight cylinder. When you reach the uncovered nori strip, dampen it slightly with water to seal the roll. Press the roll with the mat to shape and compact it for 10–15 seconds.
Place the roll seam-side down. Using a very sharp, wet knife, trim off the uneven ends then slice the roll into 6–8 equal pieces (clean the knife between cuts to keep slices neat).
Top each slice with a thin salmon slice (from the reserved thinly sliced salmon). Drizzle lightly with remaining spicy mayo and a few drops of soy sauce if desired. Sprinkle toasted sesame seeds and 1/2 tsp masago per roll spread across pieces.
Plating & Serving
Arrange the sliced rolls on a plate. Garnish with the remaining masago, microgreens or mixed salad greens, pickled ginger and wasabi on the side. Serve immediately with soy sauce for dipping.
Storage note: consume fresh same day for best texture. Leftover rice or fish should be refrigerated and used within 24 hours; do not freeze assembled sushi.
