Rinse and Cook Rice

Place the 2 cups sushi rice in a fine-mesh sieve and rinse under cold running water, rubbing the grains together, until the water runs clear (about 3–5 minutes). Drain 10 minutes. Transfer rice to a rice cooker or pot and add 2.25 cups water. If using a pot, bring to a boil uncovered, then reduce to low, cover, and cook 15 minutes. Remove from heat and let rest, covered, 10 minutes.

Season Rice

While rice cooks, combine rice vinegar (4 tbs), sugar (2 tbs), and salt (1 tsp) in a small saucepan over low heat just until sugar and salt dissolve; do not boil. Transfer cooked rice to a large shallow bowl (traditionally a hangiri). Pour the vinegar mixture evenly over the hot rice. Using a wooden paddle or spatula, cut and fold the rice gently while fanning or letting air circulate to cool it to body temperature. Stop when rice is glossy and slightly sticky. Cover with a damp towel until ready to assemble (up to 30 minutes).

Prepare Fillings

Mix shredded crab (4 oz) with 2 tbs mayonnaise and 1 tsp light soy sauce; set aside. Julienne the cucumber and thinly slice the avocado. If using tuna/salmon, slice into long thin strips suitable for rolling/topping. Lightly toast 1 tbs sesame seeds in a dry pan over medium heat until fragrant, 1–2 minutes; set aside to cool.

Prepare Sakura & Ume

If using pickled sakura petals, rinse briefly to remove excess saltiness and pat dry. Mash or thinly spread 2 tsp umeboshi paste so it will layer easily on rice. If you have whole pickled sakura, reserve petals for garnish; if only petals are available, gently press some into the rice later as decoration.

Seasoning Sauce

Combine 2 tbs light soy sauce and 1 tbs mirin in a small bowl for a dipping/brush sauce. Optionally stir 1 tsp kewpie mayo into part of this sauce for a creamier drizzle.

Assembling Sakura Roll

Set Up

Place a nori sheet shiny-side down on the plastic-wrapped bamboo mat. Keep the small bowl of water nearby to wet fingers so rice won't stick.

Spread Rice

Wet your fingers in the vinegar-water bowl. Take roughly 3/4 cup of seasoned sushi rice and evenly spread it over the nori, leaving a 1-inch (2.5 cm) border at the far edge. Press rice gently to adhere; do not compress too much.

Add Ume Layer & Fillings

Lightly spread about 1/2 teaspoon of umeboshi paste in a thin line along the center of the rice. Place a thin line of the crab-mayo mixture (about 2 tbs) over the ume line. Add a few cucumber julienne, a couple of thin avocado slices, and a few strips of tuna/salmon if using (reserve some fish for topping if desired).

Roll

Lift the edge of the mat nearest you and roll away from you, pressing gently but firmly to form a tight cylinder. Use the mat to shape the roll, then give a final firm squeeze to seal. Wet the exposed nori edge to help seal.

Top and Garnish

If making a classic sakura look, thinly slice remaining tuna into ribbons and lay across the top of the roll, or spread a thin layer of rice on the outside (inside-out roll) and top with tuna slices and pickled sakura petals. Sprinkle toasted sesame seeds across the top. For inside-out finish: after rolling with nori inside, place roll rice-side down on plastic, top with tuna slices, and use the mat to press so fish adheres. Gently press a few sakura petals into the rice/fish where desired.

Slice

Wet your sharp knife with the vinegar-water and slice the roll into 6–8 even pieces, cleaning the blade between cuts to keep slices neat. Wipe the blade with a damp cloth between slices if rice sticks.

To Serve

Arrange Sakura Rolls on a platter. Serve with pickled ginger, a small dab of wasabi, and the soy-mirin dipping sauce on the side. Optionally drizzle a little kewpie-mayo blend over each slice and garnish each with one pickled sakura petal for a delicate floral presentation.

Leftovers: keep tightly wrapped in plastic and refrigerated up to 24 hours; fresh is best within a few hours.
