Mango-Habanero Sauce
Prepare sauce
Place 1 cup chopped ripe mango, 1/4 habanero (seeded for less heat), 2 tablespoons lime juice, 1 tablespoon honey, 1 teaspoon white vinegar, 1/2 teaspoon salt and 1 teaspoon olive oil in a blender or food processor.
Blend until smooth, stopping to scrape down the sides as needed. If sauce is too thick for spreading, add up to 1 teaspoon water and blend again to reach a slightly pourable but spreadable consistency.
Taste and adjust seasoning: add more honey for sweetness, lime for acidity, or a pinch more salt. Transfer sauce to a small bowl and chill briefly while preparing rolls (10–15 minutes) to let flavors marry.
Rolls Assembly
Prepare tortillas
Warm 4 large flour tortillas briefly to make them pliable: wrap in a clean kitchen towel and microwave 20–25 seconds or heat individually in a dry skillet 20 seconds per side over medium-low heat.
Lay one warm tortilla flat. Spread about 1.5 to 2 tablespoons of the Mango-Habanero Sauce in a thin layer across the center third of the tortilla, leaving edges free for rolling.
Place one lettuce leaf on top of the sauce, then add 2 slices of cooked ham, 1 slice of Swiss cheese (or equivalent grated), about 3–4 tablespoons (roughly 1/4 cup) of sliced ripe mango, and 1/4 of the sliced avocado along the length of the tortilla.
Fold the bottom edge of the tortilla up over the filling, then fold in the left and right sides, and continue rolling tightly toward the top to form a compact roll. Repeat with remaining tortillas and fillings.
Finish and Serve
Optional toasting: heat a nonstick skillet over medium heat and add 1 tablespoon butter. Place rolls seam-side down in the skillet and toast 1.5–2 minutes per side until golden and the cheese softens. Rotate to get even color and press lightly with a spatula. Remove and transfer to a cutting board.
Using a sharp knife, slice each roll in half diagonally. Arrange on a platter, drizzle additional Mango-Habanero Sauce as desired, sprinkle with 2 tablespoons chopped fresh cilantro, and serve with lime wedges.
