Stuffed Jalapeños
Prepare peppers
Rinse jalapeños and pat dry. Wearing gloves, slice each pepper lengthwise and remove seeds and membranes with a small spoon to reduce heat. Leave the stem intact if you want a handle.
Make filling
In a medium bowl combine drained flaked tuna, softened cream cheese, shredded cheddar, shredded Monterey Jack, sliced green onions, garlic powder, smoked paprika, hot sauce (if using), 1/2 tsp salt, and 1/4 tsp black pepper. Mix thoroughly until smooth and evenly distributed.
Stuff peppers
Using a small spoon, fill each pepper half with the tuna-cheese mixture, slightly mounding but compacting so it stays during frying. Place stuffed jalapeños on a tray and refrigerate 15–20 minutes to firm the filling (this helps breading adhere).
Breading & Frying
Set up breading station
Place flour and cornstarch in a shallow bowl, stir in 1/2 tsp salt and 1/2 tsp baking powder. In a second bowl whisk the eggs. In a third bowl add panko breadcrumbs. Alternatively, to create a light batter: whisk cold club soda into the flour/cornstarch mixture and eggs until a slightly thick but pourable batter forms.
Coat peppers
For a double-coat crunch: first dredge each chilled stuffed pepper in the flour mix (shake off excess), dip into beaten eggs (or batter), then press into panko breadcrumbs to fully coat. For batter-only: dip directly into the batter then carefully place into hot oil.
Heat oil
Pour vegetable oil into a deep, heavy-bottomed pot to a depth of about 3 inches (or use a deep fryer). Heat to 350°F (175°C). If you don't have a thermometer, test with a small pinch of batter — it should sizzle and rise steadily.
Fry peppers
Fry the stuffed jalapeños in batches so they don't crowd. Carefully lower 3–4 peppers into oil and fry 2.5–4 minutes, turning once, until exterior is golden brown and cheese inside is melted. Avoid overfrying (which can combust the filling or burn the crust). Use a slotted spoon to transfer to a paper-towel-lined tray to drain.
Crisp finish (optional)
If any pieces are slightly oily, place on a wire rack in a 375°F (190°C) oven for 3–4 minutes to re-crisp before serving.
Finishing & Serving
Garnish and serve
Sprinkle grated parmesan and chopped cilantro over the hot fried jalapeños if using. Serve immediately with lime wedges and ranch or crema for dipping. Recommend squeezing a bit of lime over each for brightness.
Safety note
Let any remaining hot-filled peppers cool slightly for 1–2 minutes before serving — the cheese/tuna filling retains heat and can be very hot.
