Sushi Rice & Seasoning
Rinse and cook rice
Place 1.5 cups short-grain sushi rice in a fine-mesh sieve and rinse under cold water, swirling until the water runs clear (about 4–5 minutes). Drain. Combine rinsed rice and 1.8 cups water in a rice cooker or pot. If using stovetop, bring to a simmer, cover, reduce heat to low and cook for 15 minutes. Remove from heat and let rest, covered, for 10 minutes.
Season rice
While rice rests, mix 3 tablespoons rice vinegar, 1 tablespoon sugar and 1/2 teaspoon fine sea salt in a small bowl until dissolved. Transfer cooked rice to a wide, shallow bowl (a wooden hangiri or large bowl preferred). Gently fold the vinegar mixture into rice with a rice paddle or spatula by cutting and turning motions to avoid mashing. Fan the rice as you fold to cool to slightly above room temperature (about 10 minutes). Keep covered with a damp towel until ready to assemble.
Firecracker Filling
Prepare spicy fish mix
In a bowl combine 6 oz finely diced sushi-grade tuna (or salmon) with 3 tablespoons mayonnaise, 1 tablespoon sriracha (adjust heat to taste), 2 tablespoons masago, 1 thinly sliced green onion, 1/2 teaspoon toasted sesame oil and 1/2 teaspoon lime or lemon juice (optional). Mix gently until evenly coated. Taste and adjust seasoning — add a pinch of salt or more sriracha if desired. Keep chilled until assembly.
Prepare vegetables and avocado
Peel and thinly slice avocado. Julienne cucumber and remove excess moisture by patting with paper towel. Keep ready in a small bowl.
Roll Assembly
Prepare mat and nori
Wrap bamboo sushi mat with plastic wrap to prevent sticking. Place 1 nori sheet shiny side down on the mat.
Spread rice
Wet your fingers lightly to prevent rice sticking. Take roughly 3/4 cup seasoned sushi rice and evenly spread it over the nori, leaving a 1-inch strip of nori at the far edge without rice. Press rice to an even thickness (~1/4 inch).
Flip nori (optional inside-out style)
For inside-out (rice outside) style: carefully flip the nori so the rice side is down on the plastic-wrapped mat, exposing the nori side up. If you prefer traditional (nori outside), skip flipping and assemble with nori on the outside.
Roll tightly
Starting from the edge closest to you, lift the mat and roll away from you, applying gentle but firm pressure to form a tight cylinder. Seal the exposed nori edge with a little water. If making an inside-out roll, use the mat to shape rice into a smooth outside.
Repeat
Repeat the assembly steps for the second nori sheet to produce two rolls total, using the remaining rice and filling.
Topping & Finish

Combine remaining spicy fish mix (reserve about 1/3 for topping) with an extra teaspoon of sriracha mayo if needed so it holds its shape. Mix in a tablespoon of masago if you have extra for color. Keep chilled briefly if warm.
Slice rolls
With a very sharp knife dipped in hot water and wiped dry between cuts, slice each roll into 8 pieces. Clean and reheat the knife between cuts for clean edges.
Top and garnish
Place a small spoonful (roughly 1 teaspoon) of the spicy fish topping on each sushi piece. Sprinkle tempura crunch and a pinch of masago or tobiko over each. Drizzle unagi sauce (about 1/2 teaspoon per piece) and sriracha mayo in a zigzag. Finish with toasted sesame seeds and a few slivers of green onion.
Serve
Arrange pieces on a platter with soy sauce, wasabi and pickled ginger on the side. Serve immediately so crunch remains crisp.
