Method
Prep jalapeños & stuffing
Prepare jalapeños
Wash and dry the jalapeños. Wearing gloves if desired, slice each jalapeño lengthwise in half and remove seeds and membranes with a small spoon to reduce heat and create a cavity for stuffing. Pat dry again.
Make cream filling
In a medium bowl, combine the softened cream cheese, shredded cheddar, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir until smooth and fully incorporated. Taste and adjust seasoning.
Using a small spoon or piping bag, fill each jalapeño half evenly with the cream-cheese mixture. Do not overpack — leave a small gap at the top so filling does not squeeze out while breading. Place stuffed jalapeños on a tray and refrigerate for 15–20 minutes to firm up the filling (this helps prevent leaking during frying).
Breading station
Set up three shallow bowls: Bowl 1 — combine the all-purpose flour and cornstarch and the 0.5 tsp salt; mix well. Bowl 2 — whisk together the eggs and whole milk until smooth. Bowl 3 — place the breadcrumbs or panko in the third bowl.
One at a time, dredge each chilled stuffed jalapeño half first in the flour mixture, shaking off excess; then dip into the egg mixture, allowing excess to drip off; finally press into the breadcrumbs until evenly coated. For a thicker crust, repeat the egg and breadcrumb steps for a double-coat. Place breaded jalapeños on a parchment-lined tray and refrigerate for 10 minutes to help the coating adhere.
Frying
Pour vegetable oil into a deep heavy-bottomed pot or deep-fryer to a depth of about 2–3 inches (roughly 4–6 cups depending on your pot). Heat oil to 350°F (175°C). If you don’t have a thermometer, test by dropping a small piece of bread — it should brown in about 45–60 seconds.
Working in batches (do not overcrowd), carefully lower the breaded jalapeño halves into the hot oil using tongs or a spider strainer. Fry for 2.5–4 minutes until golden brown and crisp. Maintain oil temperature around 325–350°F; adjust heat as needed so the coating browns without the filling leaking out or the jalapeño becoming soggy.
Using a slotted spoon, remove fried jalapeños and transfer to a paper towel–lined baking sheet to drain. If desired, keep finished batches warm in a 200°F (95°C) oven on a rack while you finish remaining batches.
Finishing & serving
Let fried jalapeños rest 1–2 minutes to cool slightly (filling will be very hot). Arrange on a platter, sprinkle with chopped cilantro if using, and serve with lime wedges and ranch or crema for dipping.
Storage: Leftovers can be refrigerated in an airtight container for up to 2 days. Re-crisp in a 375°F (190°C) oven for 8–10 minutes before serving.
