Rinse and cook rice

Place the short-grain rice in a fine mesh sieve and rinse under cold water, swirling until the runoff runs mostly clear (about 3–4 minutes). Drain 10–15 minutes. Combine rinsed rice and 1.1 cups water in a small saucepan with a tight-fitting lid. Bring to a gentle boil over medium-high heat, then reduce to the lowest heat, cover and simmer for 12–14 minutes until water is absorbed.

Season rice

While the rice cooks, warm rice vinegar, sugar and salt in a small bowl or microwave-safe dish until sugar dissolves (about 15 seconds). When rice is done, remove from heat and let sit covered 10 minutes. Transfer rice to a shallow nonreactive bowl. Gently fold in the vinegar mixture with a wooden spatula or rice paddle while fanning to cool to near room temperature (this preserves shine). Keep covered with a damp towel until assembly.

Prepare tuna

Trim the sushi-grade ahi into bite-sized strips about 1/2-inch thick. Lightly season with 1/4 tsp kosher salt and 1/4 tsp black pepper. Toss the tuna with 1 tablespoon light soy sauce and the juice of half a lemon or lime (optional) and let marinate 5–10 minutes in the refrigerator while you prepare other components.

Prepare avocado and vegetables

Peel and slice the avocado into thin slices or 1/4-inch strips. To avoid browning, brush lightly with a squeeze of lemon/lime if desired. Remove cucumber seeds, cut into thin julienne strips. Slice green onion on the bias into thin rounds.

Toast nori (optional)

If you prefer slightly toasted nori, hold sheets over an open flame briefly (1–2 seconds) or sauté in a dry skillet 10–15 seconds per side until crisp but not burnt. Keep sheets flat on a clean surface for assembly.

Make spicy mayo

In a small bowl combine 3 tablespoons mayonnaise with 1 teaspoon sriracha. Taste and adjust heat or mayo ratio to preference. Transfer half to a squeeze bottle or small piping spoon for drizzling; reserve the rest to mix with tuna if you like a saucy filling.

Prepare crunch

If using panko, lightly toast 2–3 minutes in a dry skillet until golden and then crush into flakes. Combine toasted panko or tenkasu with 1 teaspoon toasted sesame seeds in a shallow bowl for easy dipping and sprinkling.

Assembly & Finish

Assemble temaki (hand roll)

Lay one nori sheet shiny side down on your palm or on a clean work surface. Wet your fingers with water to prevent sticking. Place about 1/3 cup of seasoned sushi rice at the lower corner of the nori (for a cone shape) and spread into a small triangular bed leaving a 1/2-inch border at the edges. If making 4 temaki, divide rice evenly among sheets.

Add fillings

Arrange 2–3 tuna strips across the rice, add a couple slices of avocado, a small handful (about 1 tablespoon) of julienned cucumber, and a sprinkle of sliced green onion and microgreens. If you reserved spicy mayo to mix with tuna, add a small spoonful on top; otherwise drizzle the mayo from the bottle.

Add crunch and finish

Press a tablespoon of the tempura flakes/panko-crunch onto the exposed fillings so they adhere to the mayo or rice. Drizzle 1/2 tablespoon unagi sauce over the filling for sweet-salty glaze. Sprinkle a pinch of toasted sesame seeds. Fold the bottom corner of the nori over the fillings and roll into a cone, sealing the edge with a small dab of rice or mayo. Repeat to make 3 more temaki.

Serve

Serve temaki immediately so nori stays crisp with pickled ginger, wasabi and soy sauce on the side. Eat by hand, dipping the open end lightly into soy if desired. Leftover components: keep rice covered, refrigerated tuna only if unused (use within 24 hours).
