In a medium bowl, beat the softened cream cheese until smooth and slightly fluffy using a fork or small whisk.

Add the finely chopped crab meat, sliced green onions, minced garlic, soy sauce, Worcestershire sauce, sugar, black pepper, and sesame oil. Mix thoroughly until well combined and homogeneous. Taste and adjust seasoning if desired.

Cover the bowl and refrigerate the filling for 15–20 minutes to firm up slightly — this makes filling the wrappers easier.

Wrappers & Assembly

Lay out a clean work surface and arrange wonton wrappers in a single layer. Keep unused wrappers covered with a damp towel to prevent drying.

Place about 1 heaping teaspoon (approximately 12–14 g) of the chilled filling in the center of each wrapper. Do not overfill — for a standard crispy Rangoon, use about 1 tsp per wrapper for small folded shapes or up to 1.5 tsp for full 4-piece stuffed style.

Lightly moisten the edges of the wrapper with the reserved cold water. Fold into your preferred shape: classic four-cornered purse (pull all four corners together and pinch to seal) or fold into triangles and press edges. Ensure all seams are tightly sealed to prevent filling leakage during frying.

Place assembled Crab Rangoons on a parchment-lined tray, seam-side down. If making ahead, refrigerate the tray for 10–15 minutes to further firm the wrappers and seals.

Breading & Frying

Prepare a light batter (optional) to give extra crispness: whisk together all-purpose flour, cornstarch, and salt in a small bowl. Gradually add cold water and stir until you have a smooth, slightly runny batter (consistency of heavy cream). If you prefer no batter, you can fry the wrappers directly; batter will create a thin crispy coating.

Heat vegetable oil in a heavy-bottomed pot or deep fryer to 350°F (175°C). Use enough oil so the Rangoons can float and not touch the bottom (about 3–4 inches deep). A thermometer is recommended for consistent results.

Working in small batches (4–6 pieces at a time, depending on pot size), either dip each sealed Rangoon briefly into the batter to coat, letting excess drip off, or place them directly into the hot oil if not using batter.

Fry for 2½–3½ minutes, turning occasionally, until the wrappers are uniformly golden brown and crisp. Overcrowding lowers oil temperature — keep batches small for even cooking.

Use a slotted spoon to transfer cooked Rangoons to a paper towel–lined tray to drain. Let rest 1–2 minutes before serving; the filling will be very hot.

Dipping Sauce (optional)

Pour sweet chili sauce into a small serving bowl. If desired, stir in 1 tsp soy sauce for a slightly saltier balance. Serve alongside warm Crab Rangoons.
