Inspect the lump crab meat for any shells or cartilage and pick them out. Gently break any large lumps so pieces remain tender; avoid overworking the crab to keep texture.
In a medium mixing bowl, combine mayonnaise, crème fraîche (or sour cream), Dijon mustard, lemon juice, Worcestershire, and hot sauce. Whisk until smooth and well combined.
Fold the crab meat and chopped imitation crab into the dressing gently with a spatula so the meat stays flaky.
Cover the bowl and refrigerate the crab filling for at least 15 minutes (up to 1 hour) to allow flavors to meld. If time is tight, you may use immediately, but chilling improves texture and flavor.

Choose your roll vessel: warm tortillas slightly (15–20 seconds in microwave or a dry skillet) to make them pliable, or prepare nori sheets and sushi rice if making sushi-style rolls (not detailed here). For tortilla route continue below.
Lay a warmed tortilla flat. Place a washed lettuce leaf centered on the lower third of the tortilla (this acts as a moisture barrier).
Spoon about 3 heaping tablespoons (roughly 1/4 cup) of the chilled crab mixture onto the lettuce near the edge closest to you, forming a line but not overfilling. Adjust amount depending on tortilla size—aim for 6 rolls from the mixture provided.
Fold the bottom edge up over the filling, then fold in the sides and roll tightly to enclose (like a burrito). Repeat with remaining tortillas and filling. If using lettuce wraps instead of tortillas, place filling on leaf and fold/roll or fold like a taco.
If desired, brush the outside of each roll lightly with melted butter and sprinkle with sesame seeds or toasted breadcrumbs. For a warm finish, place rolls seam-side down in a nonstick skillet over medium-low heat and press gently for 30–45 seconds per side until slightly golden and sealed. Do not overheat (crab filling is chilled).
Garnish & Serving
Slice each roll in half on the diagonal with a sharp knife (wipe knife between cuts for a clean slice) and arrange on a platter.
Drizzle remoulade or lobster-style sauce over the rolls or serve on the side for dipping (about 1 tablespoon per roll). Garnish with a sprinkle of fresh dill or parsley and place a lemon wedge beside each portion.
Serve immediately so tortillas remain tender and avocado stays fresh. Leftover crab filling can be refrigerated up to 2 days; assemble rolls just before serving.
