Chill
Place a champagne flute in the freezer for 5 minutes or fill it with the 0.5 cup of ice to chill while you prepare the cocktail.

Measure and combine
In a cocktail shaker, combine 1.5 oz Empress Gin, 0.75 oz fresh lemon juice, and 0.5 oz simple syrup.

Add ice and shake
Add approximately 1 cup of ice to the shaker. Secure the lid and shake vigorously for 10–12 seconds, until the shaker feels very cold to the touch.

Prepare flute
If you chilled the flute with ice, discard the ice now and wipe the inside briefly if needed.

Double-strain into flute
Using a Hawthorne strainer and a fine mesh strainer (or just the built-in strainer if fine mesh is unavailable), double-strain the shaken mixture into the chilled champagne flute, leaving space for the sparkling wine.

Top with sparkling rosé
Carefully top the cocktail with about 3 oz chilled Brut Rosé. Pour gently down the side of the flute to preserve bubbles and avoid overflow.

Garnish and serve
Express a lemon twist over the drink to release oils, run it around the rim if desired, then drop the twist into the flute as a garnish. Serve immediately.
