Method
Cheeses
- 1
Temper & Label
Remove all three cheeses from refrigeration 30–45 minutes before serving to come to room temperature. This improves flavor and texture.
- 2
Portion
Weigh or portion 2 oz of each cheese. For soft cheese, leave in a small wheel or log; for firmer cheeses, slice or cut into manageable wedges. Keep rinds intact unless inedible.
- 3
Place on board
Arrange the three cheeses on the board with space between them so accompaniments can be placed between and around each cheese.
Accompaniments — Fresh & Picked
- 4
Wash and dry grapes and fresh fruit. Slice apples or pears thinly and toss immediately with a light squeeze of lemon if not serving within 15 minutes to prevent browning. Drain cornichons and pat dry.
- 5
Place fruit and pickles in small clusters around cheeses to provide color, texture contrast, and palate cleansers.
Accompaniments — Nuts, Spreads & Condiments
- 6
If nuts are not toasted, warm a dry skillet over medium heat and toast nuts 3–5 minutes, stirring frequently, until fragrant. Cool before using.
- 7
Accompaniments — Breads & Crackers
- 8
Slice baguette thinly and toast until lightly golden. Arrange toasted slices and assorted crackers in small stacks or fan shapes on the board so guests can easily pair with cheeses.
Garnish & Finish
- 9
Tuck fresh herb sprigs between items for aroma and visual appeal. Lightly sprinkle flaky sea salt and a touch of freshly ground black pepper on the exposed surfaces of the firmer cheeses if desired.
- 10
Perform a final check: ensure cheese knives or spreaders are available (one per cheese type or two to three total), and that items are balanced across the board for color and accessibility.
- 11
Serve immediately. Recommend guests start with the mildest cheese and progress to stronger flavors.
