Method
Chicken & Marinade
Prep and marinate
Trim excess fat from chicken thighs and cut into burger-sized pieces (about 4–6 oz each). In a bowl combine soy sauce, mirin, sake, grated ginger, grated garlic, sugar, kosher salt, and black pepper. Add chicken, stir to coat, cover, and refrigerate for at least 30 minutes and up to 4 hours.
Coating & Fry
Heat oil
Pour neutral oil into a deep skillet or heavy-bottomed pot to a depth of about 1 to 1 1/2 inches. Heat to 340–350°F (170–175°C). If you don't have a thermometer, test with a small pat of batter — it should sizzle steadily but not brown instantly.
Mix coating
In a shallow bowl combine potato starch, all-purpose flour, baking powder, and white pepper. Stir to break up lumps.
Coat chicken
Working with one piece at a time, let excess marinade drip off the chicken, then dredge thoroughly in the starch-flour mixture, pressing lightly so the coating adheres. Place coated pieces on a wire rack and let rest 10 minutes — this helps the crust set.
Fry
Fry chicken in batches so pieces don't crowd. Cook 4–5 minutes per side, turning once, until crust is golden brown and internal temperature reaches 165°F (74°C). Maintain oil temperature between 320–350°F; adjust heat as needed. Transfer fried chicken to a wire rack over a baking sheet to drain and keep crisp.
Hot-Honey Glaze
Make glaze
In a small saucepan over low heat combine honey, hot sauce, apple cider vinegar, and red pepper flakes. Warm, stirring, until honey thins and the mixture is glossy and combined, about 2–3 minutes. Do not boil. Remove from heat.
Glaze chicken
Toss each hot fried chicken piece in a small bowl with about 1 tablespoon hot-honey glaze so it's evenly coated but still retains crispness. Alternatively brush glaze on the chicken just before assembling the burger.
Sriracha Mayonnaise
Whisk together mayonnaise, sriracha, lemon juice, and kosher salt in a small bowl until smooth. Taste and adjust sriracha for heat or lemon for brightness. Keep chilled until assembly.
Slaw
In a bowl combine shredded cabbage, shredded carrot, and sliced green onion. Add rice vinegar, mayonnaise, salt, and pepper then toss to coat. The slaw should be lightly dressed — it will sit on the burger and should not be soggy. Refrigerate until ready to use.
Assembly & Garnish
Build the burger: spread about 1 tablespoon sriracha mayo on the bottom bun. Place 1–2 butter lettuce leaves on mayo, add the glazed Karaage chicken piece, top with 2–3 dill pickle slices, then a generous spoonful (about 2–3 tablespoons) of slaw. Add a light drizzle of any leftover hot-honey glaze if desired. Spread sriracha mayo on the top bun and close the burger.
Serve immediately while chicken is hot and crust is crisp. Makes 2 burgers. Leftover components: keep slaw chilled and store glazed chicken in the refrigerator (reheat in a 375°F oven for 8–10 minutes to restore crispness).
