Method
Bread
Prepare and warm
Preheat the oven to 200°C (400°F). Arrange 4 ciabatta slices on a baking sheet cut-side up. Lightly brush the cut sides with 1 tsp olive oil to promote even browning.
Garlic & Parmesan Butter
Soften and mix butter
Place 4 tablespoons unsalted butter in a small bowl at room temperature or microwave for 6–8 seconds until just soft but not melted.
Add aromatics
To the softened butter add 3 minced garlic cloves, 2 tablespoons finely chopped fresh parsley, 3 tablespoons grated Parmesan, 1/2 teaspoon lemon zest (optional), 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Mix thoroughly until evenly combined.
Taste and adjust
Taste a small amount of the butter and adjust seasoning if needed (add a pinch more salt or lemon zest).
Bake & Finish
Bake
Place the baking sheet in the preheated oven and bake for 8–10 minutes, until the butter is melted and the edges of the bread are golden and crisp. For a more toasted top, switch the oven to broil/grill for the final 1–2 minutes—watch closely to avoid burning.
Add finishing touches
Remove from the oven. If desired, immediately sprinkle 1 tablespoon extra grated Parmesan and 1/4 teaspoon chili flakes over the hot slices so the cheese softens and the flakes adhere. Let the slices rest for 1 minute.
