Brew and sweeten
Brew two shots of espresso (or prepare very strong brewed coffee). While hot, stir in the granulated sugar until dissolved. Allow the espresso/coffee to cool to room temperature, then chill in the refrigerator for at least 10 minutes if possible.
If using cold-brew concentrate or already chilled coffee, combine 2 shots (or 60 ml) of concentrated espresso with 1 cup chilled coffee and the dissolved sugar; stir to combine.

Make chocolate mix
In a small bowl or measuring cup, whisk together the unsweetened cocoa powder and chocolate syrup with about 2 tablespoons of the milk to form a smooth paste with no lumps. This helps the cocoa dissolve evenly.
Add the remaining milk to the chocolate paste and whisk until combined. Taste and adjust chocolate syrup (add up to 1 more tablespoon) or sugar if you prefer a sweeter Mocha Freeze.

Blend
In a high-speed blender combine: chilled espresso/coffee mixture, chocolate-milk mixture, ice cubes, and the optional scoop of vanilla ice cream if using. Secure the lid and blend on high until the mixture is smooth, thick, and slushy — about 30–60 seconds depending on blender power. If too thin, add a few more ice cubes and blend briefly; if too thick, add up to 2 tablespoons of milk or coffee and pulse to combine.
Taste and adjust: add a little extra chocolate syrup for more chocolate flavor or a pinch of sugar if needed; pulse to incorporate.
Serve
Drizzle chocolate syrup inside the serving glass for decoration if desired. Pour the mocha espresso freeze into a tall glass. Top with a dollop of whipped cream, drizzle a little more chocolate syrup on top, and finish with chocolate shavings or a light dusting of cocoa powder.
Serve immediately with a wide straw or long spoon to enjoy the slushy texture.
