Preparation
Prepare the Salmon
Grill or pan-sear the salmon fillet until it's cooked through, about 4-5 minutes per side. Let it cool, then flake into large pieces.
Marinate the Cucumbers
Slice the cucumbers thinly and marinate them in a mixture of lime juice, salt, and a pinch of sugar for at least 15 minutes.
Assemble the Salad
In a large bowl, combine the flaked salmon, cranberries, Thai basil, marinated cucumbers, chopped tomatoes, dried sweet corn, and sunflower seeds.
Prepare the Vinaigrette
In a small bowl, whisk together lime juice, ginger, honey, olive oil, salt, and pepper until well combined.
Dress the Salad
Drizzle the spicy lime ginger vinaigrette over the salad and toss gently to combine.
