Prepare the Chicken
Preheat your oven to 400°F (200°C). In a bowl, mix olive oil, cumin, paprika, garlic powder, salt, and black pepper. Rub this mixture all over the chicken breasts.
Roast the Chicken
Place the seasoned chicken breasts on a baking sheet and roast in the preheated oven for 25-30 minutes or until the internal temperature reaches 165°F (75°C). Remove from oven and let rest for 5 minutes.
Make the Salsa
In a bowl, combine roasted corn, diced red bell pepper, black beans, and diced tomatoes. Mix well and season with salt and pepper to taste.
Serve
Slice the roasted chicken and serve it on a plate topped with the corn and bell pepper salsa. Serve with multigrain tortilla chips on the side.
