Prepare the Horseradish Sour Cream
In a small bowl, mix the sour cream with fresh horseradish. Add salt and pepper to taste. Set aside in the refrigerator to chill.
Toast the Baguette
Preheat your oven to 400°F (200°C). Slice the baguette in half lengthwise and brush the cut sides with olive oil. Place on a baking sheet and toast in the oven for about 5-7 minutes or until golden and crispy.
Heat the Beef Broth
In a saucepan, heat the beef broth over medium heat until it is simmering. Keep it warm for serving.
Assemble the French Dip
Layer the sliced medium-rare beef onto the toasted baguette halves. Optionally, sprinkle with additional salt and pepper.
Serve
Cut the assembled sandwiches in half and serve with warm beef broth for dipping and a side of horseradish sour cream.
