Prepare the Linguine

Bring a large pot of salted water to a boil. Add linguine and cook according to package instructions until al dente. Drain and set aside.

Blacken the Salmon

Pat the salmon fillets dry and coat them with olive oil. Generously sprinkle blackening seasoning on both sides of the salmon.

Cook the Salmon

In a skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the salmon fillets and cook for about 4-5 minutes per side or until cooked through and blackened. Remove from skillet and let rest.

Sauté Vegetables

In the same skillet, add remaining olive oil. Sauté mushrooms for 3-4 minutes until softened, then add cherry tomatoes and cook for an additional 2 minutes. Stir in sliced green onions and season with salt and black pepper.

Combine and Serve

Add the drained linguine to the skillet with the sautéed vegetables. Toss to combine and heat through. Serve the pasta topped with the blackened salmon and enjoy.
