Preparation and Cooking
Prepare the Salsa
In a bowl, combine the corn, chopped red bell pepper, edamame beans, cherry tomatoes, cilantro, and lime juice. Mix well and set aside.
Blacken the Salmon
Pat the salmon fillets dry and rub them generously with cajun seasoning. Heat olive oil in a skillet over medium-high heat.
Cook the Salmon
Once the oil is hot, add the salmon fillets skin-side down. Cook for about 4-5 minutes on each side or until the salmon is cooked to your liking and has a blackened crust.
Serve
Serve the blackened salmon with the roasted corn and red bell pepper salsa on top, alongside a bowl of multigrain tortilla chips.
