Prepare the Onions

Slice the yellow onions thinly. In a large pot, melt the butter over medium heat. Add the onions and sauté until they are soft and caramelized, about 20-25 minutes.

Deglaze the Pot

Once the onions are caramelized, add the white wine to the pot. Stir, scraping up any browned bits from the bottom. Let it simmer for about 5 minutes.

Add Broth and Seasoning

Pour in the beef broth, add the thyme, salt, and black pepper. Bring the soup to a simmer and let it cook for another 15 minutes.

Prepare the Croutons

While the soup simmers, preheat your oven to 375°F (190°C). Cut bread into cubes, toss with olive oil, salt, and pepper, and spread on a baking sheet. Bake until golden brown, about 10-15 minutes.

Assemble and Bake

Pour the soup into oven-safe bowls. Top with shredded Jarlsberg cheese and croutons. Place under the broiler for 3-5 minutes until the cheese is bubbly and golden.
