Preparation
Prepare the Tuna
Dice the Ahi tuna into small cubes. Place in a bowl and set aside.
Prepare the Avocado
Cut the avocado in half, remove the pit, scoop the flesh out, and dice it into small cubes.
Prepare the Tomatoes and Papaya
Dice the tomatoes and papaya into small cubes and combine them in a separate bowl.
Crispy Wontons
Fry the Wonton Wrappers
Heat oil in a deep pan over medium heat. Once hot, carefully add the wonton wrappers one at a time and fry until golden brown, about 1-2 minutes. Remove and drain on paper towels.
Tropical Drizzle
Make the Drizzle
In a small bowl, whisk together the soy sauce, sesame oil, honey, and lime juice until combined.
Assembly
Assemble the Ahi Poke Tower
Start with a layer of diced Ahi tuna at the bottom, followed by a layer of diced avocado, then the tomato and papaya mixture. Repeat the layers until you reach the desired height. Top with crispy wonton noodles and drizzle the tropical sauce over the top.
Serve
Carefully lift the tower onto a serving plate and enjoy immediately.
