Prepare equipment

Line a food processor bowl or blender ready for use. If you don't have one, use a medium mixing bowl and an electric hand mixer or a sturdy whisk.

Add the crumbled feta, softened cream cheese, and Greek yogurt to the food processor. These are the cream base — using room-temperature cream cheese helps achieve a smooth texture.

Pulse the mixture 6–8 times until mostly combined, then run the processor for 20–30 seconds more until smooth and creamy. Scrape down the sides with a spatula as needed.

With the processor running on low (or after transferring to a bowl), add 2 tablespoons extra-virgin olive oil, 1 tablespoon fresh lemon juice, 1 teaspoon lemon zest, 1 minced garlic clove, 1 teaspoon Dijon mustard, and 1 teaspoon honey. Process or beat until homogeneous and silky, another 10–15 seconds.

Taste the dip and season with 1 teaspoon freshly ground black pepper, 1/4 teaspoon salt, and 1/4 teaspoon red pepper flakes if using. Pulse briefly to incorporate. Remember that feta is naturally salty — add additional salt sparingly.

Transfer the dip to a serving bowl and smooth the surface with the back of a spoon.

Stir or sprinkle in 2 teaspoons chopped fresh dill and 2 teaspoons sliced chives, saving a little of each to garnish if desired.

Make a shallow well in the center of the dip. Drizzle 1 tablespoon extra-virgin olive oil into the well and dust the top lightly with 1/2 teaspoon smoked paprika. Finish with the reserved herbs scattered on top and a quick squeeze of the lemon wedge to taste.

For Serving (suggested)

Serve immediately with toasted pita chips, baguette slices, and fresh vegetables. Alternatively, cover and chill for 30–60 minutes to let flavors meld; remove from fridge 10 minutes before serving to bring back creaminess.

Leftovers: store in an airtight container in the refrigerator for up to 4 days. Stir before serving and add a splash of olive oil if it firms up.
