Preheat and prepare
Preheat your waffle iron according to manufacturer instructions to medium-high heat. Lightly brush or spray the plates with vegetable oil.
Mix dry ingredients
In a large bowl whisk together 2 cups all-purpose flour, 2 tablespoons granulated sugar, 1 tablespoon baking powder, and 1 teaspoon fine salt until evenly combined.
Mix wet ingredients
In a separate bowl, whisk 1 1/2 cups whole milk, 2 large eggs, 6 tablespoons melted unsalted butter, and 1 teaspoon vanilla extract until smooth.
Combine batter
Make a well in the dry ingredients and pour in the wet mixture. Gently fold until just combined — a few small lumps are fine. Do not overmix. Let the batter rest 5 minutes to hydrate the flour and thicken slightly.
Cook waffles
Cook according to your waffle iron's capacity: for a standard Belgian-size iron, portion about 3/4 to 1 cup batter per waffle. Close lid and cook until waffle is golden brown and crisp, typically 4–6 minutes. Transfer to a wire rack to keep crisp while you cook remaining waffles.
Brown Sugar Butter Sauce (Nelson Bros-style)
Warm butter and sugar
In a medium saucepan set over medium heat, melt 4 tablespoons unsalted butter. Add 1 cup packed dark brown sugar and 2 tablespoons light corn syrup. Stir constantly until the sugar begins to dissolve and the mixture is bubbling gently, about 2–3 minutes.
Add cream and simmer
Carefully pour in 1/2 cup heavy cream while stirring (mixture may bubble up). Reduce heat to low and simmer, stirring, for 2–3 minutes until slightly thickened and glossy.
Finish sauce
Remove from heat and stir in 1/2 teaspoon vanilla extract and 1/4 teaspoon fine sea salt. Taste and adjust salt or vanilla. Keep the sauce warm over the lowest heat or in a small insulated container while waffles cook.
Assembly & Toppings
Plate waffles
Place a hot waffle on each serving plate. If making stacked waffles, split between plates evenly.
Sauce and toppings
Generously spoon warm brown sugar butter sauce over each waffle. Top with optional sliced banana and toasted chopped pecans or walnuts. Dust lightly with powdered sugar if desired.
