Bread base

Preheat and prepare
Preheat oven to 425°F (220°C). Line a baking sheet with parchment or lightly oil it.

Slice the ciabatta loaf crosswise into 12 even slices (about 1/2" thick). Arrange slices in a single layer on the prepared baking sheet.

Remove toasted bread from oven and immediately rub the cut side of 1 garlic clove over each slice to impart light garlic flavor. Set aside on the baking sheet.
Tomato topping

While bread toasts, combine diced tomatoes (2 cups), minced shallot (2 tbsp), minced garlic (1 clove), sliced basil (1 cup), 2 tbs olive oil, 1 tsp red wine vinegar, 3 tsp salt, and 1 tsp black pepper in a medium bowl.

Gently toss to coat and let the mixture sit 5–10 minutes at room temperature to macerate and allow flavors to meld. Taste and adjust seasoning (add a pinch more salt or pepper if needed). Drain off any excess liquid before assembling to prevent soggy bread.

Reduce oven temperature to 400°F (200°C). If using the same baking sheet, wipe off excess crumbs or place a fresh piece of parchment under slices.

Top each garlic-rubbed ciabatta slice with about 2–3 tablespoons of the drained tomato mixture, distributing tomatoes evenly across 12 slices.

Evenly sprinkle shredded fresh mozzarella over the tomato-topped slices (about 2 cups total), leaving a little tomato visible. Lightly grate 1 tbs of Parmesan over the top and drizzle each slice with a little olive oil (about 1/2 tsp per slice).

Bake the assembled bruschetta in the 400°F (200°C) oven 8–10 minutes, or until the cheese is melted, bubbly, and beginning to lightly brown at the edges.

Remove from oven and let rest 1–2 minutes so cheese sets slightly.

Scatter pomegranate arils (1 cup) over the warm bruschetta. Tear or chiffonade fresh basil leaves and tuck them on top for fresh aromatics.

If desired, finish each piece with a light drizzle of balsamic reduction (about 2 tsp total across the platter) and sprinkle a pinch of sea salt flakes.
Serve

Arrange bruschetta on a serving platter and serve warm as an appetizer or light snack. Leftovers can be kept uncovered in the fridge and reheated briefly in a 350°F (175°C) oven to refresh the toast (5–7 minutes).
