Main Ingredients

Method

Preparation

  1. 1

    Clean the Clams

Rinse the fresh clams under cold water to remove any sand or grit. Soak them in a bowl of water for about 30 minutes, then drain.

  2. 2

    Prepare Garlic and Ginger

Peel and thinly slice the garlic cloves. Peel and grate the ginger.

  3. 3

    Chop Green Onions

Finely chop the green onions, separating the white parts from the green tops.

Cooking

  1. 4

    Make the Broth

In a large pot, heat the sesame oil over medium heat. Add the sliced garlic and grated ginger, sautéing until fragrant (about 2 minutes).

  2. 5

    Add Sake and Miso

Pour in the sake and water, bring to a gentle simmer. Whisk in the white miso paste until fully dissolved.

  3. 6

    Cook the Clams

Add the cleaned clams to the pot. Cover and cook for about 5-7 minutes, or until the clams open up. Discard any clams that do not open.

  4. 7

    Finish and Serve

Stir in the white parts of the green onions. Serve the clams in bowls with the broth, garnished with the green tops of the onions.
