Prepare the Tomatillo Gel
In a blender, combine tomatillos and a pinch of sea salt. Blend until smooth. Strain through a fine mesh sieve to get a smooth gel-like consistency. Chill in the refrigerator until ready to use.
Slice the Fish
Using a sharp knife, slice the local fish into thin sashimi-style pieces. Arrange them neatly on a serving plate.
Make the Yuzu Oil
In a small bowl, mix the yuzu juice with olive oil. Drizzle this mixture over the sliced fish.
Assemble the Dish
Spoon the chilled tomatillo gel around the fish on the plate. Sprinkle with sea salt and fresh cilantro.
Garnish and Serve
Top with microgreens for garnish and serve immediately.
