Prepare the Marinade

In a bowl, mix soy sauce, sesame oil, minced garlic, and a pinch of black pepper. Set aside.

Prepare the Beef

Finely dice the smoked tenderloin and place it in a mixing bowl. Add the marinade and mix gently.

Make the Egg Yolk Jam

In a small saucepan, whisk the egg yolks with a pinch of salt over low heat until thickened and creamy. Remove from heat and let cool.

Pickle the Asian Pear and Leek

In a small bowl, mix julienned Asian pear and sliced leek with a splash of vinegar and a pinch of salt. Let them sit for 15 minutes.

Assemble the Tartare

On a serving plate, place a mound of the beef mixture. Top with a dollop of egg yolk jam, pickled pear and leek, and garnish with shiso leaves.

Serve with Plantain Crisp

Serve the tartare with crispy fried plantain slices on the side.
