Preparation
Prepare the Plantains
Peel and mash the ripe plantains in a mixing bowl until smooth.
Activate the Yeast
In a small bowl, combine warm milk (about 110°F), sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.
Mix the Dough
In a large mixing bowl, combine the mashed plantains, flour, salt, and the yeast mixture. Mix until a dough forms.
Add Eggs and Butter
Add eggs and melted unsalted butter to the dough. Knead until smooth and elastic, about 10 minutes.
First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Shape the Buns
Punch down the risen dough and divide it into 12 equal pieces. Shape each piece into a ball and place them on a baking sheet lined with parchment paper.
Second Rise
Cover the shaped buns with a cloth and let them rise for another 30 minutes.
Preheat the Oven
Preheat your oven to 350°F (175°C).
Bake the Buns
Bake the buns in the preheated oven for 20-25 minutes or until golden brown.
Cool and Serve
Remove from the oven and let cool on a wire rack. Serve warm with epis butter.
