Rinse and Cook Rice

Rinse the short-grain rice under cold water until the water runs mostly clear (about 3–4 rinses). Drain and place rice in a medium pot or rice cooker with 440 ml water. Let soak 20–30 minutes if time allows, then cook according to rice cooker instructions or bring to a boil, reduce to low, cover and simmer 12–15 minutes. Remove from heat and let steam, covered, 10 minutes.

Season the Rice

While rice cooks, combine rice vinegar, mirin, sugar and salt in a small bowl and stir until sugar dissolves. Transfer cooked rice to a wide bowl, sprinkle the vinegar mixture evenly over the rice and gently fold with a rice paddle or spatula to coat without smashing the grains. Fan the rice while mixing if possible to cool slightly and create a glossy finish. Keep covered and warm until assembly.

Make Teriyaki Sauce

In a small bowl combine soy sauce (4 tbs), mirin (2 tbs), sake (1 tbs), brown sugar (1 tbs), minced garlic and grated ginger. Stir until sugar partially dissolves. Set aside.

Cook Chicken

Pat chicken pieces dry and season lightly with a pinch of salt. Heat 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Add chicken in a single layer (work in batches if needed) and sear until browned, 3–4 minutes per side, until cooked through (internal temperature 74°C / 165°F). Remove cooked chicken to a plate.

Glaze Chicken

Reduce heat to medium and pour the teriyaki sauce into the skillet. Let simmer 1–2 minutes, stirring. If you want a thicker glossy glaze, mix 1 tsp cornstarch with 1 tbsp water to make a slurry and stir into the sauce. Return chicken to the pan and toss to coat, cooking another 1–2 minutes until sauce thickens and clings to the pieces. Remove from heat and sprinkle toasted sesame seeds and sliced nori strips if using.

Quick Spinach Salad (Ohitashi-style)

Bring a pot of salted water to a boil. Blanch the baby spinach for 15–20 seconds until wilted and bright green. Drain and immediately plunge into ice water to stop cooking. Squeeze out excess water, toss with 1 tsp sesame oil and 1/4 tsp salt. Portion into bento compartments.

Cook Edamame

If using frozen edamame, simmer in salted water 3–4 minutes until tender. Drain and season lightly with salt. Cool slightly and add to bento box.

Pickled Cucumber & Carrot

Combine 1 tbs rice vinegar, 1/2 tsp sugar and 1/8 tsp salt in a small bowl. Add sliced cucumber and julienned carrot, toss to coat and let sit 10–15 minutes to lightly pickle. Drain excess liquid before packing to prevent sogginess.

Prepare Pickles and Garnish

Portion 2 tbs pickled ginger or other pickles into a small compartment to add acidity. Cut nori sheet into thin decorative strips and set aside. Keep furikake and extra sesame seeds for sprinkling on rice just before serving.

Assemble Bento Boxes

Divide seasoned rice among two bento boxes (about 1 cup cooked rice per box). Sprinkle furikake or toasted sesame seeds over rice and add a strip or two of nori on top. Arrange teriyaki chicken in the largest compartment next to the rice. Fill remaining compartments with blanched spinach, edamame, and pickled cucumber/carrot. Add sliced tamagoyaki or halved hard-boiled eggs, a lemon/lime wedge, and a small portion of pickled ginger. Place a small sauce container with 1 tbs soy sauce for each box if desired.

Storage and Serving

If not eating immediately, cool all components to near room temperature before sealing boxes to prevent condensation. Refrigerate and consume within 24 hours for best quality. Reheat chicken gently in microwave (covered) for 30–60 seconds, if desired, and serve with rice and sides at room temperature or warmed.
