Make Simple Lemonade Syrup

Dissolve sugar

In a small saucepan or heatproof bowl, combine 1/2 cup of the cold water and the granulated sugar. Warm gently over low heat or stir until the sugar is fully dissolved, forming a clear syrup (about 2–3 minutes). Remove from heat and let cool slightly. If using honey instead of part/all sugar, skip warming and dissolve honey into the lemon juice or warm a small amount of water with honey to thin it first.

If you prefer a no-heat approach, combine sugar with the lemon juice and stir vigorously until most sugar dissolves, then proceed — warming simply speeds complete dissolution and smooth texture.

Mix base

In a large pitcher, pour the fresh lemon juice and the prepared sugar syrup. Add the remaining 3 1/2 cups cold water and stir to combine. Taste and adjust sweetness: add up to 1 tablespoon honey or up to 2 tablespoons more sugar dissolved in a little water if you want it sweeter, or add extra water if too tart.

Add zest and chill

Stir in the lemon zest for a brighter aroma. Refrigerate the lemonade for at least 20–30 minutes to allow flavors to meld and for it to become well chilled. If you’re short on time, you can fill glasses with ice and serve immediately.

Assemble drinks

Fill four tall glasses with ice cubes. Pour the chilled lemonade over the ice, dividing evenly. Add a lemon slice to each glass and, if using, tuck 1–2 mint leaves into each for garnish.

Give each glass a quick stir and taste; adjust with a splash more water or a pinch of sugar if needed. Serve cold.
