Prepare Spam

Open the can of Spam and remove meat. Place on a cutting board and slice into five even slices about 1/4 to 1/3 inch thick.

Season

Lightly season both sides of each Spam slice with black pepper and garlic powder (if using). No additional salt is needed because Spam is already salty.

Fry Spam

Heat a large nonstick or cast-iron skillet over medium-high heat. Add 2 tablespoons vegetable oil and let it heat until shimmering (about 30–45 seconds). Add Spam slices in a single layer (work in batches if necessary). Fry 2–3 minutes per side, or until deep golden brown and caramelized. Use tongs or a spatula to flip carefully so slices remain intact. Transfer fried Spam to a paper-towel-lined plate to drain briefly.

Rice

Measure 1/2 cup short-grain white rice and rinse under cold water until water runs mostly clear (2–3 rinses). Drain well.

Combine rinsed rice, 3/4 cup water, 1/8 teaspoon salt, and 1/2 teaspoon butter or oil (optional) in a small saucepan with a tight-fitting lid. Bring to a gentle boil over medium-high heat.

When it begins to boil, reduce heat to low, cover, and simmer for 12–15 minutes without lifting the lid, until water is absorbed. Remove from heat and let sit, covered, for 8–10 minutes to steam. Fluff with a fork and portion one scoop (about 3/4 cup cooked, depending on scoop size) onto plate.

Macaroni Salad (single scoop)

Bring a small pot of salted water to a boil. Add 1/4 cup elbow macaroni and cook until just tender (al dente), about 6–7 minutes. Drain and rinse under cold water to stop cooking and cool the pasta.

In a small bowl, combine 2 tablespoons mayonnaise, 1 teaspoon finely chopped celery, 1 teaspoon finely chopped onion, 1/2 teaspoon apple cider vinegar, 1/4 teaspoon sugar, 1/8 teaspoon salt, 1/16 teaspoon black pepper, and 1/2 teaspoon milk if you prefer a creamier, looser texture. Stir until smooth.

Add cooled macaroni to the dressing and toss to coat. Taste and adjust seasoning. Chill briefly if desired, then portion one scoop (about 3/4 cup) alongside rice.

To Serve

Arrange five pieces of fried Spam on a plate next to one scoop of steamed rice and one scoop of macaroni salad.

Garnish with sliced green onion. Serve soy sauce on the side for drizzling (about 1 teaspoon) or a lemon wedge if preferred.
