Chicken Katsu
Prep Chicken
If using chicken breasts, butterfly or pound to an even 1/2-inch thickness. Pat chicken dry with paper towels. Season both sides with 1 tsp salt and 1/2 tsp black pepper.
Set up Breading Station
Place the flour in a shallow dish. In a second dish, beat the eggs until smooth. Place panko breadcrumbs in a third shallow dish. Optionally season panko with a pinch of salt and smoked paprika for extra flavor.
Bread Chicken
Dredge each piece first in flour (shake off excess), then dip into beaten eggs, then press firmly into panko to coat evenly. Set breaded cutlets on a tray and let rest 5 minutes so coating adheres.
Fry Chicken
Heat a heavy skillet over medium heat and add about 1 cup vegetable oil; heat to 350°F (175°C) or until a small breadcrumb sizzles immediately. Add cutlets (do not crowd) and fry 3–4 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Adjust heat so panko browns but doesn't burn. Transfer to a wire rack or paper towel-lined plate to drain. If using oven to finish, you can bake at 375°F (190°C) for 8–10 minutes after searing.
Slice
Let chicken rest 3 minutes, then slice into 1/2-inch strips suitable for filling tacos.
Kilauea Sauce (Buffalo-style)
In a small saucepan over low heat, melt 2 tbsp butter. Add 1/2 cup hot sauce, 1 tsp honey, 1/2 tsp soy sauce, 1/4 tsp garlic powder and 1/4 tsp smoked paprika. Whisk until combined and slightly warmed through (about 1–2 minutes). Taste and adjust balance (more honey for sweetness, more hot sauce for heat). Keep warm or transfer to a small bowl.
Ranch
Stir 1/2 cup ranch dressing with 1 tbsp minced chives. Taste and adjust seasoning. Chill until ready to assemble.
Rice
Rinse 1 cup rice under cold water until water runs mostly clear. Combine rinsed rice, 1.5 cups water, 1/4 tsp salt and 1 tsp butter or oil in a small pot. Bring to a boil, then reduce to low, cover and simmer 15 minutes. Remove from heat and let rest, covered, 10 minutes. Fluff with a fork before serving.
Macaroni Salad
Cook 1 cup elbow macaroni in salted boiling water according to package instructions until al dente. Drain and rinse under cold water to stop cooking and cool the pasta. Drain well.
In a bowl, combine 1/2 cup mayonnaise, 1 tsp apple cider vinegar, 1 tsp sugar, 2 tbsp diced celery, 2 tbsp grated carrot, 1/2 tsp salt and 1/4 tsp black pepper. Stir to combine. Fold in cooled macaroni until evenly coated. Chill at least 30 minutes to let flavors meld.
Tortillas & Assembly
To assemble each taco: place a warm tortilla on a plate, add a small handful (about 1/3 cup) mixed shredded cabbage (combine green and red cabbage), top with 3–4 slices of chicken katsu, drizzle 1–2 tbsp Kilauea (buffalo) sauce over the chicken, and finish with 1 tbsp ranch dressing and a sprinkle of chopped cilantro. Squeeze a little lime over the top if desired.
Serve tacos immediately with a scoop of rice (about 1/2 cup per person) and 1/2 cup macaroni salad on the side. Offer extra Kilauea sauce and ranch for passing.
