Combo Components
Method
Combo Assembly
Prepare proteins (if not pre-cooked)
If your meats are not already cooked, prepare them now. For grilled chicken: season 8 oz with salt and pepper, grill over medium-high heat 6–8 minutes per side (internal temp 165°F/74°C), then rest 5 minutes and slice or shred. For beef: season and sear or grill 8 oz to desired doneness, let rest 5 minutes and slice thin. For pork: roast or braise 8 oz until tender (internal temp 145°F/63°C for roasted pork; longer if braised), then slice or pull. If using pre-cooked deli or rotisserie meats, reheat gently to 140–160°F (60–71°C).
Cook rice (if not pre-cooked)
If rice is not already cooked, rinse 1/2 cup uncooked short-grain white rice until water runs clear. Combine with 3/4 cup water in a small pot, pinch of salt, bring to a boil, then reduce to a low simmer, cover and cook 15 minutes. Remove from heat and let stand covered 5 minutes. Fluff with a fork and stir in 1 tablespoon butter if desired. Measure out 1 cup cooked rice for the combo.
Heat macaroni and cheese
If using prepared refrigerated or frozen mac and cheese, heat 1 cup according to package instructions or reheat in a saucepan over medium-low heat stirring frequently until hot (3–5 minutes). Add a splash of milk or a teaspoon of butter if it looks dry to restore creaminess. Maintain on low heat until assembly.
Portion meats
Divide each type of meat into 8 oz portions (about a generous handful each). For attractive plating, arrange the three meats in separate portions on the tray or plate, slightly fanned or piled so each is visible.
Portion rice and mac
Scoop 1 cup of the cooked rice into a rounded scoop and place it beside the meats. Scoop 1 cup of hot macaroni and cheese and place it next to the rice, keeping it from spilling over the meats. If using garnishes, place a lemon wedge or pickled vegetable beside the rice.
Add sauces and seasonings
Season meats to taste with black pepper. Offer 2 tablespoons of barbecue sauce and 1 tablespoon of hot sauce on the side or drizzle lightly over the meats if desired. Taste a small piece of each meat and adjust seasoning if needed.
Package the drink
Chill and provide the 20 oz beverage of choice (soda, iced tea, or water). If serving on-site, pour the drink into a 20 oz cup with ice as requested.
Final check and serve
Ensure everything is hot (meats 140–160°F holding temp, mac and rice hot to the touch). Close the container or plate attractively with the drink beside it. Serve immediately.
