Prepare the dough

In a large mixing bowl, combine the flour, 1 tablespoon of sugar, baking powder, cinnamon, and salt. Mix well.

Add wet ingredients

In a separate bowl, mix together the tvorog, grated apple, egg, vanilla extract, and milk until smooth. Gradually add this mixture to the dry ingredients and stir until just combined.

Fry the ponchiki

Heat the oil in a deep frying pan over medium heat. Once hot, drop spoonfuls of the dough into the oil, frying until golden brown on both sides, about 2-3 minutes per side. Remove and drain on paper towels.

Combine the sugar mix

In a shallow bowl, mix together 1 cup of granulated sugar, 2 teaspoons of cinnamon, and 1 teaspoon of ground coriander until well combined.

Coat the ponchiki

While the ponchiki are still warm, roll them in the coriander cinnamon sugar mixture until fully coated.

Cara Cara Orange Curd

Prepare the curd

In a saucepan, combine the juice of the cara cara oranges, 1/2 cup of sugar, and the egg yolks. Whisk until smooth.

Thicken the curd

Add the butter and cornstarch to the mixture and heat over medium-low heat, stirring constantly until the mixture thickens, about 5-7 minutes. Remove from heat and let cool slightly.
