Prepare sausage

If using sausage links, remove casings by slicing lengthwise and peeling or by snipping ends and pushing meat out. If using bulk sausage, leave as-is. Place the 1/2 lb sausage in a bowl and break up any large pieces with a fork so it will brown evenly.

Season

Sprinkle the sausage with 1/4 tsp salt, 1/8 tsp black pepper, 1/4 tsp paprika, 1/8 tsp garlic powder, and 1/8 tsp crushed red pepper flakes (if using). Toss to distribute the seasonings evenly through the meat.

Heat pan

Place a 10-inch skillet over medium heat. Add 1 tablespoon olive oil and 1 teaspoon butter (if using). Heat until butter foams and oil shimmers, about 1 minute.

Cook onion and garlic

Add 1/4 cup finely chopped yellow onion to the pan. Sauté for 2–3 minutes, stirring occasionally, until translucent and beginning to brown. Add 1 minced garlic clove and cook for 30 seconds until fragrant, stirring constantly to avoid burning.

Brown sausage

Add the seasoned sausage to the pan, spreading it into an even layer. Let it sit undisturbed for 1–2 minutes to develop color, then break it up with a spatula. Continue to cook, stirring occasionally, until the sausage is evenly browned and cooked through, about 6–8 minutes total. There should be no pink remaining and juices should run clear.

Drain excess fat (if needed)

If the sausage releases a lot of grease, carefully tilt the pan and spoon off excess fat into a heatproof container or drain on paper towels, leaving enough fat to coat the pan for flavor (about 1 teaspoon).

Finish and flavor

Taste the cooked sausage and adjust seasoning with a pinch more salt or pepper if needed. Stir in 1 tablespoon chopped fresh parsley for brightness and 1 teaspoon hot sauce or mustard if you like more tang or heat. Squeeze the lemon wedge over the sausage just before serving for a fresh lift.
