Inspect & clean

Rinse the 1/2 lb of green mussels under cold running water. Discard any mussels with cracked shells or that remain open when tapped. Use a small brush or the edge of a knife to scrub off barnacles and seaweed. Remove the beard (byssus threads) by pulling it toward the hinge of the shell; if stubborn, trim with kitchen shears.

After cleaning, place the mussels in a bowl, cover and refrigerate briefly while you prepare the rest of the ingredients (no longer than 30 minutes).

Prepare aromatics

Peel and finely mince 2 garlic cloves and half a shallot. Chop 1 tablespoon fresh parsley. Measure 1 tablespoon each of extra-virgin olive oil and unsalted butter.

In a wide heavy skillet or sauté pan with a tight-fitting lid, warm the olive oil and butter over medium heat until the butter melts and foams but does not brown (about 1 minute). Add the minced shallot and cook, stirring, until translucent, about 1–2 minutes. Add the minced garlic and cook 30–45 seconds until fragrant, stirring to avoid burning.

Deglaze & season

Add 1/4 cup dry white wine (or broth) to the pan to deglaze, scraping any browned bits from the bottom. Pour in 1/2 cup water as well. Stir in 1/4 teaspoon sea salt, 1/8 teaspoon freshly ground black pepper, 1 teaspoon fresh lemon juice, and 1/8 teaspoon red pepper flakes if using. Bring the liquid to a gentle simmer over medium-high heat.

Taste the liquid quickly and adjust seasoning if needed (remember flavors will concentrate as the mussels steam).

Carefully add the cleaned mussels to the simmering pan and immediately cover with the lid. Steam until the mussels open, about 4–6 minutes. Shake the pan once or twice during cooking to redistribute heat. Discard any mussels that remain closed after 6 minutes.

Once opened, remove the pan from heat. Spoon the cooking liquid over the mussels and sprinkle the chopped parsley on top. Taste the broth and add a pinch more salt or a few drops of lemon juice if desired.

To finish / serve

Serve the mussels immediately in the pan or transfer to a shallow bowl. Accompany with lemon wedges and crusty bread to soak up the broth. Each of 2 slices of bread can be toasted and rubbed with the remaining garlic if desired.
