Add Liquids and Seasoning
Pour in the white wine and scrape the bottom of the pot to deglaze. Add the beef broth, thyme, bay leaf, salt, and black pepper. Bring the mixture to a simmer and let it cook for about 30 minutes.
Prepare Bread and Cheese
While the soup simmers, preheat the oven to 350°F (175°C). Place the slices of French bread on a baking sheet and toast them in the oven until golden brown, about 10 minutes. Remove from the oven and set aside.
Assemble and Serve
Ladle the soup into oven-safe bowls. Place a slice of toasted French bread on top of each bowl and generously sprinkle with Gruyère cheese. Place the bowls on a baking sheet and broil in the oven for 3-5 minutes, or until the cheese is melted and bubbly. Serve hot.
