Prepare the Rice Noodles

Cook the rice noodles according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside.

Grill the Sichuan Pork

Marinate the pork with Sichuan spices, soy sauce, garlic, and ginger for at least 30 minutes. Preheat a grill or grill pan over medium-high heat. Grill the pork for about 4-5 minutes per side until cooked through. Let it rest for a few minutes before slicing thinly.

Prepare the Vegetables

Blanch the Chinese broccoli in boiling water for about 1-2 minutes until vibrant green and tender-crisp. Drain and cool in an ice bath. Combine with chilled corn and pickled red cabbage.

Assemble the Dish

In a large bowl, combine the chilled rice noodles, grilled Sichuan pork slices, Chinese broccoli, corn, and pickled red cabbage. Toss gently to combine.

Serve the sour and spicy rice noodles with additional Sichuan sauce or chili oil drizzled on top, if desired.
