Prepare the Pork
In a large pot, combine the pork shoulder, soy sauce, brown sugar, minced garlic, minced ginger, and chicken broth.
Braise the Pork
Cover the pot and let it simmer on low heat for about 3-4 hours, or until the pork is tender and easily shredded.
Cook the Rice
While the pork is braising, cook the rice according to package instructions.
Prepare the Bean Sprouts
In a separate pan, stir-fry the bean sprouts in a bit of oil over medium heat for about 3-5 minutes until just tender.
Serve
Once the pork is done, shred it and serve over a bed of rice. Top with stir-fried bean sprouts, diced cucumber, and sliced scallions.
