Prepare the Beets and Potatoes

Wash and peel the beets and potatoes. Cut both into small, uniform cubes.

Cook the Vegetables

In a large skillet, heat a tablespoon of oil over medium heat. Add the cubed beets and potatoes, season with salt and pepper, and sauté until tender and lightly browned, about 15-20 minutes.

Cooking the Brisket and Eggs

Add the Brisket

Once the vegetables are cooked, add the chopped Montreal-spiced brisket to the skillet. Stir and cook for another 5 minutes until heated through.

Cook the Eggs

In a separate pan, prepare the eggs to your liking (fried, poached, or scrambled). Cook them for about 3-5 minutes.

Serve the Hash

Divide the beet and potato hash among plates. Top each serving with a cooked egg and serve with slices of Red Hen toast on the side.
