Prepare the Filling

In a skillet over medium heat, cook the local chorizo until browned and fully cooked, about 5-7 minutes. Remove from the skillet and set aside.

Sauté the Leeks

In the same skillet, add sliced leeks and sauté until softened, about 4-5 minutes.

Combine Ingredients

In a mixing bowl, combine the cooked chorizo, sautéed leeks, chopped fresh basil, and pomodoro sauce. Mix well to combine.

Assemble the Pie

Preheat your oven to 375°F (190°C). Roll out your pie crust and place it in a pie dish. Pour the chorizo mixture into the pie crust and top with crumbled Jasper Hill cheese.

Bake the Pie

Bake the pie in the preheated oven for 25-30 minutes or until the crust is golden brown and the cheese is bubbly.

Cool and Serve

Allow the pie to cool for a few minutes before slicing. Serve warm and enjoy!
